Our chefs make classic dishes like mussels, fish and meat inspired by Nordic and European traditions, complemented by a rich selection of wine served by knowledgeable sommeliers. The café opens early and serves breakfast, lunch and dinner.

PABLO ZOTELO

Originally from Argentina, half Italian. Pablo has worked as cook and chef in top restaurants in Norway, Argentina and Spain. With his in-depth knowledge from several food cultures, Pablo balances the rustic brasserie style with a playful, artistic approach.

MARIUS HYLSENG

Marius is a certified waiter and sommelier, and has been working for Colonialen since the beginning – over 10 years. He is responsible for the largest branch of Colonialen.
